Tomatoes marinating


Tomatoes marinating in olive oil, balsamic vinegar, lemon and a little Dijon mustard, with raw crushed garlic and chopped fresh basil leaves between the tomato slices.

August/September is tomato season in Ontario, the only time of year we can make this dish.



We ate this dish last night with a frittata made with cheese and red and yellow bell peppers. We marinated tomatoes again tonight to have with spaghetti pesto and Portuguese chicken with hot sauce. It's the simple things.

    Those tomatoes look amazing! The real thing. They actually seem ripe and I can almost taste them from here. Obviously you have some Italian in you somewhere. That's a picture that crosses sensory boundaries. Thank you.
